30-09-09 Interview with Peter Sankoff

This week I interview Peter Sankoff, who teaches animal law at Auckland University and has recently written a book on animal law. We discuss the problems with the Animal Welfare Act, the problems with animals status as property and why certain animals are excluded from the Act.

I also discuss some vegan fast food options and read out a recipe for vegan vegetable fritters. If you couldn’t quite hear it, here’s a copy

Ingredients:

1 heaped cup finely chopped veggies (onion, grated zucchini, corn etc)

¼ cup flour plus 2 tbsp

1 tbsp cornmeal

1 heaped tsp sugar

1/4 tsp salt

1/4 cup + 1 tbsp cup water

oil

Directions:

 Make the batter by first combining the dry ingredients and then stirring in the water. Mix in the finely chopped veggies (all the veggies will mix in, even if it looks impossible). Drop spoonfulls of the veggie batter into a hot oiled skillet and flatten them into patties. Cook both sides until they’re golden brown.

    • Oops, I probably should have just said vegetable fritters. It definitely works with corn though, which is how I normally make it with.
